1.5 lbs (700g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

1 tablespoon ginger paste or grated ginger

1 tablespoon garlic paste or minced garlic

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

1/2 teaspoon turmeric

1/2 teaspoon red chili powder (adjust according to your spice preference)

Salt to taste

4 tablespoons unsalted butter

1 medium onion, finely chopped

2 tablespoons tomato paste

1 cup tomato puree or crushed tomatoes

1 cup heavy cream

1 teaspoon garam masala

Fresh cilantro leaves for garnish


In a mixing bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, ground cumin, ground coriander, paprika, turmeric, red chili powder, and salt. Mix well.

Add the chicken pieces to the marinade and coat them evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.

Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet lined with foil. Bake for 20-25 minutes or until the chicken is cooked through. You can also cook the chicken on a stovetop skillet until browned.

Sprinkle the garam masala over the butter chicken and stir gently.

Garnish with fresh cilantro leaves.

Serve the butter chicken hot with steamed rice, naan bread, or roti.
